receta de alubias pintas con pulpo y rebollones

LLegamos a octubre, un mes mas con el #retocomermaslegumbres de #foodbloggersaragon. Hemos pasado unas fiestas del Pilar con un tiempo fantástico pero todo cambia y el tiempo también, así que con este fresco que nos ha dejado la pasada tormenta vamos a preparar esos platos de cuchara. Llego el otoño y los platos calentitos ¡¡
Como siempre la receta es super fácil y esta vez no he cocido las legumbres, mucho mas rápido para preparar, sigue leyendo y veras que rápido tienes un plato de legumbre que bien podíamos llamarlo mar y montaña por los ingredientes que hemos utilizado.



INGREDIENTES:
- 1 bote de judias pintas de 400 gr.
- 250 gr. de rebollones
- 2 dientes de ajo laminados
- 1 cebolla mediana
- 1 cucharadita de pimentón
- 1 o 2 patas de pulpo cocidas (según tamaño)
- 1/2 l. de agua
- sal y aceite de oliva virgen extra

PREPARACION:

    1. Limpiamos los rebollones y los partimos en trozos. Freimos con 2 dientes de ajo laminados y reservamos.

    2. Cortamos el pulpo en rodajas y reservamos junto con el caldo que llevan.

    3. Preparamos un sofrito con la cebolla picada, cuando este ponchada añadimos el pimentón, fuera del fuego, para que no se queme.

    4. Rapidamente añadimos el caldo del pulpo cocido, agua y los rebollones que teníamos reservados con el ajo. Cocemos unos 5 minutos todo junto

    5. Añadimos el bote de alubias pintas y rectificamos de sal. cocemos otros 5 minutos y listo.


Os hábeis dado cuenta que rápido hemos preparado un rico plato con legumbres ?? No tenéis excusa para prepararlo ya veréis como os va a encantar. Se puede preparar con cualquier tipo de seta ya que ahora estamos en temporada.
